Brown Rice pudding
There’s just something so comforting about eating rice pudding. It makes you feel cozy and warm inside. The first time I ate brown rice pudding, I just felt so comforted in a way and everything about this food is heavenly.
Brown Rice pudding Ingredients
1 cup Bob’s Red Mill brown rice
1/2 teaspoon salt
2 Tablespoons butter
4 cups whole milk
2 Tablespoons sugar
2 Tablespoons honey
4 cups water
1 teaspoon vanilla extract
A dash of cinnamon powder
pinch of ground cardamom
1/2 cup dried sour cherries (or raisins, or prunes or any dried fruit that suits you)
1. Wash the brown rice until water is clear then set aside.
2. In a pot, bring the 4 cups of water to a boil and then mix in brown rice plus salt. Adjust heat to medium setting and simmer rice uncovered for 30 minutes. Stir occasionally.
3. 30 minutes after, remove the pot from the cooking area.
4. Remove excess water from the brown rice by sitting it in a strainer for 10 seconds and then putting it back to the pot. Immediately put a tight fitting lid on it and let the brown rice rest and steam for 10 minutes.
5. Add the honey, cinnamon, 4 cups of milk, sugar, pinch of cardamom and vanilla to the rice in the pot. Bring to a very low boil, mixing often so the milk doesn’t burn. Add the butter and cherries and stir often.
Note: Don’t let the milk boil furiously for it might curdle.
6. Simmer in low heat until the milk and the brown rice is creamy. Place in a large serving dish to cool. Serve hot or cold, it’s delicious.
