1. Kutsinta with Bob’s Red Mill Rice Flour


Kutsinta is a Filipino rice cake that is brown and has a jelly like appearance but surprisingly firm consistency. It is a favorite snack in the Philippines and tastes great with freshly grated coconut.


You will need the following Ingredients:


1 cup Bob’s Red Mill Rice Flour

2 cups of brown sugar

3 cups water

1 teaspoon lye water or potassium carbonate solution which is sold in Asian food stores

Freshly grated coconut


Directions for cooking:


1. In a large mixing bowl, mix all the ingredients and stir well.

2. Pour the mixture into muffin pans, until halfway full.

3. Steam in a large pan with a cover, take note that the water ought to be 2 inches deep.

4. Continue steaming for 30 minutes. You’ll know if the kutsinta is ready if when a toothpick is inserted and removed, the toothpick comes out clean. Add more water if needed to steam some more up until cooking is done.

5. Remove the kutsinta from the muffin pans and top them with freshly grated coconut.

Directions for cooking:

2. Mix well to make a smooth mixture. Add in the anise seeds and mix thoroughly.

3. Fill greased muffin pans up to 2/3 full.

4. Cook in a steamer for 30 minutes. You’ll know the puto is done when toothpick or cake tester inserted in center comes out clean. Serve hot topped with grated coconut and cheese strips.



3. Bibingkang Galapong with Bob’s Red Mill Rice Flour




2 cups Bob’s Red Mill Rice Flour

2 tablespoons baking powder

1/2 teaspoon salt

1/4 cup coco cream, 1/4 cup sugar for topping

4 eggs, beaten

2 cups coconut milk

1 cup sugar

1/4 cup melted margarine




Combine sugar and beaten eggs. Mix salt and rice flour then add to egg mixture.
Melted margarine and mix it with coconut milk and baking powder.
Pour into a mold lined with a banana leaf.
Bake in oven in 375 degrees Fahrenheit.
When half-done, take the bibinka out and brush top with coconut cream and sugar.

Bake until crust is golden.
Makes 3 large bibingkas.
