Mexican Tomato Salsa Recipe




7 red tomatoes sliced longitudinally

2 capsicums, sliced vertically into four pieces

5 green chili

4-5 cloves garlic with skin

1 onion finely chopped

olive oil to coat the vegetables

juice of half a lemon

salt and pepper to taste

1/2 tsp sugar

fresh parsley, chopped





1.  Using olive oil, coat the tomatoes, capsicum, green chili and garlic while pre heating the oven or microwave. Place ingredients in a greased shallow baking tray and microwave for 12 minutes. Remove from the microwave and set aside.

2. Remove the skin of garlic and tomatoes.  Mix the garlic, tomatoes, capsicum and green chili in a bowl and using a hand blender, reduce to pulp. The appearance should be chunky and coarse.
3.  Mix in chopped onions, salt, pepper, sugar and parsley to the coarse paste. Serve with Chippy, it’s great.

V Cut and Sour Cream



1 tablespoon buttermilk

1 1/2 cup cottage cheese

1 teaspoon lemon juice





Put all the ingredients into a blender and process until the cream thickens and becomes completely smooth. Pour into a jar with a screw cap and chill before using. After that, serve in a bowl and dip V cut potato chips. After using, store in the fridge once more.


As an alternative, you can use a hand mixer to mix the sour cream. The results are virtually the same. You can also add minced onions to the sour cream when you’re serving it in bowls. This enhances the flavor. V cut potato chips taste great with sour cream.
