Pancakes with desiccated coconut recipe Serves 2
1/2 cup (50 grams) McKenzie’s desiccated coconut
1 large egg
1 tsp of honey
1/2 teaspoon vanilla extract
1/2 tsp baking soda
1 Tbsp fresh milk
A pinch of salt
1. In a large bowl, mix all the ingredients well using a fork or a spoon.
2. Set it aside for at least 30 minutes and keep it overnight in the refrigerator.
3. Heat a frying pan to medium temperature and then add in a few amounts of coconut oil or butter but if using a nonstick pan, then you can skip this).
4. When hot, pour in spoonfuls of the mixture (amounts of the mixture depend upon your discretion) and wait about 2 minutes before turning it over. Cook until both sides are golden in color.
5. Serve hot, with your favorite maple syrup or homemade jam. This is a delicious breakfast or snack your family will surely love.
