Datu Puti is still King of vinegar production in the Philippines and is yet to be surpassed. And, its soy sauce brand is going stronger as it has slowly penetrated the market along, in small stores and bigger groceries.

The Datu Puti Vinegar still has no match. It has that distinct “Asim” or sourness, that, when used as seasoning for Paksiw, Adobo and Kilawin (Local Filipino recipes that are favorites with Vinegar)delivers a sweetish taste that lingers just a bit to ask you to try out more.

The Datu Puti Vinegar is also a very good dip for Filipino favorites like Chicharon, Green mango and Spring Rolls. When used as dips, it is usually brought to the table with diced or minced garlic, carrots, cucumber or ginger.

There are a lot of things to do with Datu Puti, especially if you like you vinegar sour with a tinge of sweetness. If you want to enhance the vinegar’s flavor, you have put some side chilies (a favorite for Filipinos), or maybe slice up some onions and garlic and put them all in a bottle mixed up with the Datu Puti.

As for Datu Puti Soy Sauce, I can’t tell if there’s something unique about it. It’s the usual soy sauce, same packaging as the Datu Puti vinegar, it’s interesting that more people are actually trying it out as a constant supply of Datu Puti Soy Sauce in the local Grocers. It is best paired with the Datu Puti Vinegar when cooking, that’s a fact. Soy Sauce is a common seasoning in the Philippines, usually paired with Kalamansi (local lemon) and some pepper or jalapeno.

Datu Puti has primarily the Sugar Cane Vinegar, but has launched a lot of variation including the Coconut Vinegar that provides a less sour taste perfect for mild vinegar requirements.  Other renditions of the Datu Puti Vinegar Include the Spiced Vinegar which has a more enhanced taste as premixed with onions, ginger and garlic. Also included is the Datu Puti Sugarcane Juice Vinegar which has a sweeter taste that the Pure Sugar Cane Vinegar.

Packaging includes tight sealed sachets, and glass plastic bottles. Suggested to buy the plastic bottles and just refill with the sachets. These are pretty easy to store and have a very long shelf life especially if stored in dry places.

Datu Puti How to prepare/use

Dip – Use this as dip to local Philippine food. Use it as you would on any Cane Vinegar / Soy Sauce.

Seasoning – Used a lot for Kilawin/Kinilaw, adobo and Paksiw – Favorite Filipino comfort food

Marinade – For Barbecues, You can use some Vinegar and a lot of Soy Sauce together with Spices and Kalamansi. This should also do the trick for simple grilled fish, pork and chicken.
